A fresh egg can be recognized from its high, rounded yolk – and the white is divided into two layers, a thick, inner ring around the yolk and a thinner, outer ring.

It takes around 14 hours for the hen to create the eggshell which consists of four layers. Only the outer layer is white or brown.

Does your egg have a white string? This is the so-called ”kalaza string” which keeps the yolk in place.

A fresh egg can be difficult to peel when it has been cooked, probably because a newly laid egg has a lower pH-value.
